These organs don't have any accordions, the ones on organs that do have them are fed air through the organ's bellows, so they don't have to be manually moved in and out. Behind every key is a small bellow that pulls the key down when it is inflated. Thus, the accordion plays a note. The release of air also causes the accordion to fold a little bit, which makes it look more as if someone is actually playing it.
